Build in an ice-filled rocks glass and stir.

Origin: Created in honor of my friend Pierre who, at the time, was entertaining an offer for a directorial position.

• 2 oz light rum
• 1 oz sweet vermouth
• ½ tsp Amer Picon

Stir and strain into a cocktail glass.

• 2 oz Highland Park 12-year Scotch
• ½ oz Amer Picon
• ½ oz sweet vermouth
• 2 dashes Angostura bitters

Stir and strain into a cocktail glass. Twist a lemon peel over the top and drop it in.

• 1 ½ oz rye
• ½ oz sweet vermouth
• ¼ oz Amer Picon or Torani Amer
• 2 dashes orange bitters

Stir and strain into a cocktail glass. Twist a lemon peel over the top, rub it around the rim, and drop it in.
