Gently muddle the mint, simple syrup, and lime juice in a highball glass. Fill the glass with ice, pour in the rum, and stir. Pour in the fizz water and garnish with a mint sprig.

• 2 oz rum
• ½ oz lime juice
• ¼ oz simple syrup
• 1 kiwi, peeled and sliced
• 10 fresh mint leaves

Gently muddle the mint with the syrup in a highball glass. Fill the glass with crushed ice. Muddle the kiwi in a cocktail shaker and add the rum and lime juice. Shake and double- strain into the highball glass. Kiwi slice garnish.

• 2 oz gin
• ½ oz lime juice
• ¼ oz simple syrup
• 7 fresh mint leaves
• 2 oz ginger beer
• 2 oz fizz water

Gently muddle the mint, syrup, and lime juice in a highball glass. Add ice and pour in the gin. Stir. Pour in the ginger beer and fizz water. Lime wedge garnish.

• 4 oz dry red wine
• ¼ oz rum
• 1 oz orange juice
• ½ oz lemon juice
• ½ oz simple syrup
• fizz water

Pour the first five ingredients into an ice-filled highball glass and stir. Top with fizz water and garnish with seasonal fruits.
